There is a growing interest from consumers, bakers, and farmers to access heritage grains. Whether that is emmer, einkorn, red fife, spelt, or wheat, there are many barriers to bringing these types of grains to the market… starting with seeds! Indeed, seeds are only available in packet size, and it can take years to grow and multiply before having a volume large enough to fit into a mechanical seeder or combine. In this session, you will hear from farmers and researchers who have been working with heritage grains.
